Hello Nor Cal,
Welcome to June. Going to be a hot week temperature wise, so everyone stay hydrated, or better yet, don't go outside. Of course, that is easy to say, but not very practical if you work for a living.
It looks like I'll be eating chicken this week. Now I've got to figure out at least 10 different ways to make chicken. At least it's supporting a local company. Foster Farms. Any Nor-Cal members here work at Foster Farms in Modesto? I'm only eating chicken to help keep everyone employed. Not considering that it's $0.79.
Chicken on pizza? You must pre-cook the chicken, right? My pizza is in the oven about 10 minutes, or just enough to cook the dough and melt the cheese. Chicken would probably still be raw. I'm not scared. Raw chicken is served in Japan. Amazing how much raw food is eaten in Japan, and you just don't hear of salmonella.

Oh yeah. When we have chicken, we will often take the left over and shred it. We either freeze it for later use, or put in the fridge if we expect to use it in the next day or two. Besides the chicken and pesto, we also usually throw on sliced mushrooms, sliced olives, maybe a little scallion. A couple of times I've also added shredded cheddar in addition to the traditional mozzarella.

Happy thirsty Thursday Nor Cal. Supposed to be over 100 today. Went to the bank for the cashier's check for the rent already. So now I can stay indoors when it gets hot.

That is the magic of pizza. You can almost do whatever you want. Deep dish. Thin crust. Sourdough. Jalapeno & pineapple. Being Chinese, I've often threatened to make a bbq pork pizza. Make a pizza crust, topped with the bbq pork stuffing which usually goes into the bbq pork buns sold in Chinatown. I would imagine that just about any combination of ingredients from any dish, could be spread over the crust and baked. Roast pork and spicy garlic beans with plantain bananas could be a Cuban pizza.
My next pizza project (RSN) will be a deep dish pizza in a cast iron skillet. Saw it done on ATK (America's Test Kitchen), and it looked pretty easy. Theirs was a simple two-cheese pizza, so it was super simple.
I tried that. Just lined the skillet with pizza dough, added toppings, and baked. My cast iron skillet was only 8 or 10 inches. I suspect that you'll be more satisfied using a larger skillet. I want to do it again, if I ever buy a 14 or 16 inch skillet.

I like to cook a chicken on my smoker then use that meat on pizza. I cook little 8" pizza's on my weber kettle grill, open grill. Have several 8" rounds of dough made up and lots of different ingredients, everyone can make there own, it's fast and fun!
