How have you determined both heads are bad? What problem are you having that makes you think this?

Yes you could put E7TE heads on that motor but I skeptical that is actually the problem.

I can't answer your question about weather the E7 heads will work. I would believe that your"bad" GT 40 heads would have some value to someone who would want to rework them. Some money for your pocket to help defray your costs of getting back on the road. Best of luck to you.

You have a blown head gasket most likely, it's also possible for there is a crack in the block or one of the heads but it would be incredibly unlucky that both heads are cracked.

Have the heads ever been of this motor before? If they were and thread sealant was not used on the outer head bolts that is another way to get coolant into the motor.

So you had the motor all apart? Why did you do that?
It could be an intake gasket leak too, did you use RTV silicone to seal around all the water passages?
