I can't say specifically about your part, but usually when a part comes with multiple gaskets it means the part has more than one application and that the installer uses the gasket appropriate to the current installation.
To verify this match your two new gaskets together and see if there are any differences. Only takes one really minor difference. If so then match your old gasket up to the new one that's the same then use that one.
I installed a Hitachi valve and it came with 1 gasket, which I promptly dropped into the center area and was a pain to get out. So watch out for that when you have your fingers way back in there and your tongue out and toes crossed while trying to get it aligned enough to start the bolts. Maybe I should have used a light adhesive as well?!
You only need one gasket. If the two gaskets are identical they might've dropped two in by mistake. Think of the poor sap that bought the box before or after yours, that one could be missing the gasket.
