With the supporting mods you already have in place, I think you'd be okay with stage 1's (provided you do install an EGT gauge). The e-fuel and larger HPOP will be needed to get all the juice out of those new injectors, but I think you'll be running out of turbo before you really strain those other systems. You don't want to push the stock turbo over 30 PSI or so for very long or it'll be all over but the crying.
You'll need to have some new tunes burned to that TS 6 position chip to run the stage 1s, and I would recommend you have them step back the fuel some to keep you out of trouble, but I think you'd be fine as long as you drive like a sane person. As they say, the biggest factor is the nut behind the steering wheel!
I have a 97 F250 with stage 1's and DP tunes running the stock HPOP and mechanical fuel pump.
i highly recommend e fuel at a minimum. My 2 highest settings bog way down and I feel a loss in performance. Just shoots a ton of black smoke out the exhaust.
Mark Fugazotto sells a drop in e fuel kit for $675. Google him and you'll find him. Lots of people running his e fuel setup. I was going to do it before I decided to buy a super duty and sell my OBS.
As far as mileage, I was getting about 16 with a 6" lift and worn 35" BFG's and 3.55 gears and a ZF5. I'm getting worse now but I don't have e fuel.
