I just got back from a 1400 mile round trip to the mountains of west Texas. My 06 performed great. Get something to monitor the engine vitals like oil temp, coolant temp, trans temp etc.
Also, an EGT gauge is nice. I have one and noticed something interesting. My highest reading was 1259 degrees for .48 seconds. This was during a WOT run up a long grade. Most of the time I was under 1100 degrees. So, if you are stock (I have a cat delete but stock exhaust), and don't run a tune (which you shouldn't when you tow heavy), then I believe exceeding the EGT limit of 1250 is hard to do.
As for extra stuff, cac boots and tools are what I bring. (Had a boot blow last time up the mountain)

lug nuts and suspension
Check the torque on all of the lug nuts -- trailer and truck. Make sure to check trailer suspension. On my last 5th wheel I got ready for a trip and happened to check the suspension and saw that one of the spring shackel bolts had actually ripped out. Had to hurry to get that fixed.
