And then with an oem you probably won't reach 190* until summertime..now that the temps are dropping outside so is my thermostat and it's just a year old.

Your temps from a cold start 40 min into the drive looks good to me you just don't want it the other way, oil will always be hotter for the most and when you stop and go again double check that the sensors ECT and EOT have dropped in temp and close to the same reading within but no more than 15 Deg spread

After a 24 hour "cold soak" (ie no engine starts), what are the EOT and ECT values?
