So when I turn my truck off, the battery stays lit up. I've replaced the ignition switch, and we've examined the solenoid, voltage regulator, and the alternator.
We can't seem to find what could keep the battery on with the key in the off position.
Any help or direction is much appreciated, thanks!

Until dead the battery is always hot.

Engine is off, but truck stays on - as in my heater is stilling running, I can turn the lights on and off, and the gauges are still backlit. As if the key was in the ACC or On position.
Sounds like ign switch area. I know you said you replaced it. It is the traffic director. I'm sure someone with a better response will be along shortly.
Perhaps poor ground in the stating system circuit?
Any modifications to electrical sys.; i.e., electronic ignition?
Starter Relay connections wired correctly and secure?
'Alt' gauge or idiot lights?
Was the key assembly replaced, or both switch and key?? If the key assembly is not installed correctly it's possible for the engine, or accessories to run with the ign. off.

Uh, maybe I'm missing something, but the lights...exterior and dash lights should work even if the key is on the counter in the kitchen.
Heater fan may be hooked up to a hot wire, who knows what's been done to the poor thing since '65? Heck, when I bought my truck the turn signals were hooked up to a hot wire and would flash anytime you hit the switch with your knee exiting the truck.

It all used to shut off when I first had the truck, now a few months later it started doing this.
I'll check on the heater wire though. It's not the dash lights staying lit up, it's the aftermarket gauge lights (oil pressure, engine temp, voltage)

All I've done is replace the ignition switch when the problem first appeared. Besides that, I've also cut out the old radio that was installed... any chance something there is giving me my issue?!
Sounds to me like you got the power wire to the fan and the lights to the aftermarket gauges accidently hooked to a hot wire.
Both of those can be easily traced from the source back to where they're hooked up while laying on your head under the dash.
