I saw a thread on this awhile back. Earthquake68 did a writeup, but did the opposite swap of what you wanting, he swapped one like yours for his 78-79. Here's a link to his writeup, looks pretty straight forward.
I'm not sure what's all involved for a bump grille swap, but I have heard it's been done. If you lived closer I'd just trade you grilles, I prefer the older style, lol.
yeah that's a good start and yeah I would happily swap you if you weren't half the country away, but yeah you see all these people say the bump is doable but I haven't seen one yet.
73 to 78/79: locate a outer grill shell from a 78/79 and the one piece center insert. If going with rectangle headlights you will need to get the complete headlight buckets assy and the rectangle headlight bezels.
Staying with round just get the round headlight bezels and maybe you can reuse and remount the 73 bucket assemblies.
If you look there should be the dril marks to mount the 78/79 buckets to a 73
