I want to be able to compare the temps. It is also helpful in the event I think I might have a bank of injectors down. I've ways read the manifold is better then the down pipe.
If you just want to measure the bank of injectors a infrared-Thermo heat gun is good for that , and can be used for testing the wheel bearings, brakes and various other things some thing like this .
That idea will save you drilling and tapping you manifold.
Why not just put it in the down pipe, the job would be easier then.
The manifold is the one place where you can get a true reading of what's happening with the engine. The down pipe is after the turbo and so much heat is lost that there is no way to know what the temperature is at the cylinders.

He would look pretty silly holding a IR thermometer to the manifolds while his wife is towing a boat up a grade. It's not about what the truck is doing at idle in the driveway, it's about what is happening in the real world.
If one injector is "misbehaving", it shows up on the dual EGTs.
*going out to take a look at clearance issues real quick before i comment*…brb…soo, it looks like theres just enough space to drill and tap right at the bend in the manifold just before it 'goes up' or rather, connects to the up-pipes.
i recently had really good success installing my drivers side probe and am now considering doing the same thing on pax side… only hurdle in that project will be placing the gauge in a good spot on the dash (i'm using the auber instrument digital gauge)…
if i do this in the near future, i'll let you know how it goes.
