Unplug the connector on the turbo and see if that's what your after. If that's it, just wire in a switch on one of the wires in that plug. Some guys who write tunes offer a "smoke and lope" tune, if you just gotta have it, tuning is probably a better option.
One of the many problems with rollin coal in a 6.0 is the turbo. It's a VGT (Variable Geometry) design with movable vanes around the compressor wheel. The thick **** tends to collect on the vanes and linkage inside the turbo and bind it up. Also soot deposits on the entire intake and exhaust systems including many of the sensors.
