I have a 1992 7.3 IDI 5 speed manual. When I am driving down the road normally not accelerating or decelerating it dies.. Just shuts off.. It also idles up and down while driving.. I have no idea what this could be.. Any help would be appreciated! I'm new to all this
Sounds like a sticking governor in the Injector pump.
Get some Howes Diesel conditioner.
Take the fuel filter off (even better replace it with a new one if is hasn't been done in a while), fill new one up with nothing but Diesel conditioner, fire up engine for 20 seconds, and shut down. Let it sit a minimum of an hour, even better overnight.
Next day fire 'er up, let it warm up abit, and go drive it like you stole it. Should fix the problem.

Wonder what year that these problems were worked out?
Are you running the original mechanical lift pump? Or, and after-market electric pump? I can't see your symptoms coming from a mechanical pump. I have found they work poorly all the time, or they don't work at all, or they are OK. Not much chance of intermittent.
Have you checked the electrical connections leading to the fuel solenoid? Clean tight connections?
I have more experience with Cummins; with that motor, we take the guts of the FSS out and then turn the motor off by way of a lever on the injection pump. If the symptoms get better once the FFS guts are out...then, the FFS was the problem. I don't know if the IDI IP has a manual shut-off lever.
