Sounds like something is amiss with the torque converter. Or a bypass in the transmission is getting stuck open.

If your not getting full boost when wide open,sounds like something with turbo malfunction.I was thinking they recently came out with a cure for lack of boost or no boost.

***UPDATE*** Just took a trip over to I-10 to the CAT scales. Total combined weight = 22780 which puts the trailer at 14,300 after I subtracted truck weight from second weigh. Same problem getting there, after 10-15 mins she starts slowing, surging and this is on the freeway. I switched it over so I could see oil and trams temp. Oil was bouncing at 268-271 at same time all this was going on. After truck cooled down, was ok until 10-15 mins into trip home. Pulled off freeway, let it cool, was ok again until oil heated up to that 270 and slowed and surged. ***ALSO*** want to note, round trip was 55 miles and used just over a quarter tank of diesel.

I did floor it a couple times with and without trailer, never more than half on the boost gauge with pedal floored.

Something is wrong here, your oil temps shouldn't get anywhere near that hot. Sounds to me like there is a problem with your oil cooler and your PCM is derating to prevent engine failure.

By half on boost, do you mean 10 PSI?
You'll never see over 21 PSI stock.
I echo what Tom has posted.
There is no reason for your oil to be that hot!

that oil temp info is great news, make sure the dealer sees that... I'm sure Tom is right about the PCM protecting the engine

With oil getting that hot, shouldn't it have thrown a code? Where is oil cooler on this thing?

and I think it should throw a code anytime it derates (which seems pretty obvious thats what's happening).. sorry that I missed the 'first 15 mins its fine' part of the story..

may be that you have found a bug in the firmware, and maybe have a bad temp sensor.

My 1st one would loose boost and oil temps would go sky high and never threw a code.if it's putting out only half boost it's gonna get hot pretty quick pulling a load.

The gauge is at least working so I imagine the turbo is working fine, too.
That's all you'll ever see is half (20-21 PSI).

Oil cooler is on the left side of the oil plan if you're looking at the yellow drain plug.

Definitely something wrong with that truck. Sounds like the 6.0 stories we have all heard. I'm assuming you bought it used as it is a 2011, does it act okay unloaded? Notice anything on test drive?

Purchased brand new from dealer with about 12 miles on it. It now has just under 1700 miles. Took it up to north east Arizona up some real hills unloaded on Sat, noticed sputtering like when I was floored up a hill leaving an F-150 behind, but I only thought of watching the oil/trans page today when towing. As I watched the temp fluctuate 268-271 is when I noticed all the issues I first described. Calling dealership in the am and hope they stand by their word of bringing equipment out and going on a ride to duplicate the problem.

Hopefully they do so you don't have to start over with another dealer.
How many engine/idle hours on your truck?
