Low oil shut down

Low oil shut down
It's happened a couple of times now. On the way home. The oil pressure light came on and the engine quit. Put it in park, waited a minute, then started it up and everything is ok. Oil was just changed a few days ago, oil level is still good. It's cold out, but I don't think that should matter. Ideas?

I'm with 'gashog. The oil light is a result of the stall as the engine oil pressure falls off.
Might be either an ignition system or a fuel delivery problem, but it's likely going to take some patience and persistence (or just plain luck) to accurately diagnose so it can be repaired.
If you want to take a wild stab at it, replace the PCM Power relay and see if you get lucky.

Thanks all - the truck has around 70k miles, doesn't make any weird sounds or anything. I'll try to pay more attention to it next time it quits. Electrical issues can be a pain to find - especially when it seldom acts up! I do feel better knowing that it's not shutting off due to no pressure though - Thanks!

Update
So after having the O2 sensors replaced (no help there), I had the main computer replaced. I don't really understand why it was acting up, but for the first couple of weeks I need to depress the accelerator pedal slowly so the new computer can learn the range of motion. Sounds weird to me too, but didn't do it once, and the truck stalled out.

I assumed you aren't low on oil? When I got a hole in the front engine cover recently I had 0 pressure suddenly going around a corner. Turns out the "guage" is an idiot light in guage form and I was off the dipstick low. Above a certain pressure guage is up there around the 3/4 mark. Below an it "plummets" to zero. When I added oil, started getting a ticking noise (which I've preliminarily concluded is from something like busted plastic/nylon timing tensioner or guide inside the front cover (near the hole)
