I used a 1 ton hoist and the ram will handle the weight with no problem. The one thing is that a 1 ton hoist has a smaller foot print than the heavier hoist, so once you start trying to slide the hoist around with a motor on it, even if you drop the motor down, there is a greater chance of you tipping the hoist (which has happened to me twice with my 1 ton, once with a 351 and once with a 460 hanging off it, both times with tranny/tcase so prolly pushing 1000 lbs).
At any rate, I've pulled both 2wd engine/trannies and 4wd engine/trannies without lifting the truck at all. as others have said, you will get enough angle when you start jacking up the motor. As far as I can tell, btw, its not possible to pull the tcase with the transmission/motor without undoing the front cab mounts... not sure if you have a 4wd or 2wd.
I'd personally recommend pulling the front clip. Its incredibly easy and makes pulling the motor much much easier, not to mention getting the new motor back in and everything hooked back up. I'm getting ready to swap the motor in another truck and I'm pulling the front clip.
And I'd also recommend buying a slightly larger hoist for greater stability, if you can afford it.

My dad has a 2 ton foldable HF hoist (just for the dependability) and I would only buy a four legged stand.

I agree. I had a mopar slant-6 tip over when it was on a 3 leg stand. Didnt do any damage but it scared the crap out of me.
