But this kind of got away from the original question-what do I need to do a sucessful transplant of a Clark 280V into my truck.
I think I might be repeating myself, but here goes:
You need a 361/391 bell housing, which you already know. You need to check the pilot bearing diameter (inside AND outside) required for the Clark, and to mate it to a 390's crank.
You need to neutral balance the 361/391's flywheel, or somehow find a neutral-balanced FE flywheel that can take the pressure plate used on the 391 (which, I don't think is too hard, to be honest, but I might be wrong).
As for converting to hydraulic clutch, I posted links to both a conversation about it here at FTE, and a supplier of the slave cylinders.

SH, Your's is a little unusual, in that you are looking for a particular transmission that specks out much higher that the truck that you are wanting to put it in.
I see the Clark as a viable alternative, given the correct rear gear, as I went into earlier, because of the better range of ratios available.
I don't think you're going to find any other "off the shelf" tranny, that's both heavy-duty enough, AND was mated to an FT (making it easy to adapt to an FE) so it's easy to accomplish.
The only other ones out there were either never hooked to an FT/FE, no bellhousing exists for it, and/or a slew of other issues.

What about the clutch fork? Use the one from the donor truck? And what about the clutch assembly? A stock F100/F250 assembly? And adapt it to the donor clutch fork?
The bellhousing for the Clark may use a different fork than the regular Ford bell. Not to mention, the throwout bearing is probably going to be different. Maybe, maybe not.
Without looking at the parts in question, it's a crap-shoot.
For instance, how is the clutch linkage setup on the FT? Same as the FE where there's a pivot on the bell housing (if I remember correctly)? Same diameter ball? etc. etc.
