Why not just take a truck, bob the frame and drop the body on?
You will have to build a tower to mount the body. Spend lots of time on sheet metal / sawzall work, rethink all of your controls, and your rear driveline will have to be modified quite a bit.
With all that said, your still looking at a lot less of a project than trying to fit a 7.3 in a subi.

I also love my Subaru (2005 STi; 385 HP and 397 TQ to the wheels).
I find engine swaps intriguing, but the thought of a 7.3 in an RS is pretty absurd. You would definitely not just be "droppin it in".
If you really want to add a 7.3 to a Subaru, at least pick a Brat or Baja and make a half way decent truck out of it. But if your main goal is a diesel Subaru and you want to pull it off realistically, import a new diesel boxer from Europe and go to town.
Baja's are bitch trucks and Brats are way too rare and hard to find!
