I'm going to guess the oil pan isn't properly sealed.

Yes, it does. Been there, done that. Sealant was just a little too thin in one spot on the back. Dropped the engine in, started it and immediately pulled it right back out. I now dry fit oil pans and eyeball the gaps at the front and back curved areas. The gaps do vary somewhat from engine to engine; probably due to manufacturing tolerances on the oil pans and front and rear covers. That's another reason I won't bother trying a gasket, no matter who makes it.

Or maybe the HPOP isn't fully bolted in and it puked out all the oil.

Ask me how I know...

But wouldn't that put much of it in the valley?

Once ... I didn't notice the old oil filter gasket was stuck on assembly... put on new filter...added oil... cranked car to move off ramps... O M G .....

I don't think it is coming from the high pressure side. It it were I don't believe it would ever crank. The HPOP does not pump a lot of volume just pressure. The LPOP on the other hand does. The pedestal or turbo orings pinched and squirting out the back side to the firewall could also be a culprit. If it is truly pumping out 2-3 gallons of oil in 20 seconds then I say low pressure oil somewhere.

Some did, but it mostly ran down the front of the block when it happened to me.

A cattywhompas turbo pedestal o-ring will certainly puke a LOT of oil VERY quickly. I know that for a FACT! ... and depending on the cattywhompas angle, it can direct almost all of the oil right down the back side of the engine.

Excellent! Thanks for doubling back and letting us know what you discovered.

When I ran into that scenario last January, I had done the EBPV delete and bellowed up-pipe installation (among a LOT of other things), and I managed to get the big o-ring out of position while re-installing the turbo, and it mage a HUGE mess within only a minute of running the engine... lost two gallons of oil (BRAND NEW oil) faster than I would have thought possible.
