ahhhhhh the mornings are briskly cool, the trees are turning yellow, the days are getting shorter! you know what that means?
it is time to make salsa!
that is right it is time for my annual salsa making.
I diced 15 gallons of tomatoes last night. I have 8 gallons of jalapenos, a commercial wheel barrow of chili peppers and about 200 onions left to dice. all from the garden! the only thing I had to buy was the garlic and cilantro.
Sounds good Bart and like some work too. Do you cook it and can it too?
I let it simmer while I am canning it, being hot speeds up the processing.
How many cans do you get?
I have tried once making cooking and canning and I got the taste wrong and that was about 6 jars, so I just make it cold now. I can not imagine making that much at once. How do you go about cutting all of that up?

All this salsa remind me of this fella down a ways from me that sets up an awning and sells his salsa by the road side. Interesting enough, the stuff sells like hotcakes!

all hand cut, hours with a knife and cutting board.
no I don't sell it, I do have people every year try to buy it. the jars are so expensive and you almost never get them back, so I have pretty much quit giving any to friends.
