Engines will run more efficiently at a warmer temperature. Combustion will be more complete, which leads to lower emissions and less internal sludge buildup. Oil will flow easier which leads to less drag, more hp and better fuel economy. Modern engines, including your 460, are designed to run around 200F. You'll be fine with your 180F stat, but I wouldn't recommend going any cooler.
