Going to check the fuel pressure next, what should it be? Do I need to pick up a gauge for this or will a program like Auto Enginuity or a programmer show the pressure?
That'll have to be done with a gauge. AE pulls from the PIDs in the computer and there isn't one for Fuel PSI on ours.
You don't want to see less the 45 PSI. Mine is running at 60 PSI, but stock it should be around 52-53 PSI I do believe. I never had the gauge on my truck when it was putting out stock pressure, so I'm a little fuzzy on where they normally are, however, that 45 PSI is a threshold. I wouldn't even like to see below that even if it's only at WOT.

I timed it from a dead stop today, punched it at a stoplight and it took 3.6 seconds before it started to build boost. Is that normal? That seems really slow.

You will have lag if you just stomp on it from a dead stop. Now I've never timed it when I had the stock turbo, so I don't know if that exact time is normal(I don't see it being unreasonable though, alot of variables that will play into how quickly your truck built boost), but I can tell you it's far better to ease in the throttle then it is to just try to build it all at once from a dead stop.
Well, since you are wanting to disable the EGR sensor, you'll need to get a custom tuner. No ifs ands or buts about it. SCT will do fine by you if you are on a budget. Get the X3 though. You can have them just do 1 tune for you and that would be to disable the EGR sensor. They don't have to do anything else. The joys of custom tuning.
I wouldn't do a tuner for fuel economy. You might see gains, you might not, you might even see losses. It'll take a lot of miles(and I do mean a lot) to break even on doing a tuner for fuel economy reasons.

You say the SCT if on a budget. What if I threw the budget out the window. What tuner would you suggest if I also needed an EGR delete written in to a tune.
