I'd recommend either the BFG All-Terrains or BFG Rugged Trails. As long as both are properly inflated you won't have a problem with either. The All-terrains will give a nice rugged look, with impecable on-road manners.
As I said I'm on my 3rd set and while the old Michelin LTX M/S (not M/S 2) tires were good, BFG All-Terrains do the same thing they did, just better.
If you don't plan on beach trips or any off road Excursions, then I'd look into the BFG Rugged Trails. Both can be had at Discount Tire in Load Range "E" for a reasonable price...

She'll see all kinds of moderate off road situations so I'll probably go with the BFG ATs...now what aobut the biggest size possible for the stock rims and truck height?
I am currently running 285's on my stock wheels with no issues. I am running Good Year Wrangler Silent Armours. They have about 50,000 miles and have about half tread still to go. This is the second set I have owned(first one was on my 98 Expy, 85,000 on tires when sold) and these are hands down the best tire I have ever used, especially in the snow. Just my experience.
