That sounds like injector o-rings to me. If the seals are bad then it will allow oil to pass by the injector and leak I to the combustion chamber and when it burns it burns blue. O-rings are fairly common on higher mileage motors and are quite simple to replace, it can be done start to finish in probably 4 hrs, + or - an hour or so depending on if you've done them before.
if it is only while revving up on a hot engine and if you put it to the floor in park or neutral and the truck stumbles from 2500-3100 then it is 99.9% guranteed injector o-rings.
here are a few comaprison videos for you as far as cold start smoke goes. my truck has fully functional glow plugs and good solid compression.

Its worse when the engine is cold.
I let the oil pressure get up them rev it up some and theres a cloud of blue.
Truck seems to stumble while doing it.
Ive got the truck here and thinking about buying it and trying to figure out how much work its going to need.
you cant judge rough accel on cold oil. the engine has to be up to operating temps. i have yet to see a 7.3 that didnt have some form of white/blue smoke on cold start.
if it still stumbles on a hot engine and has the smoke then you are most likely looking at injector o-rings. you can get a whole set for under 100 bucks and about a day to replace them for the first timer

I replaced them on my last 94 and it didnt stop the smoke thats why I was asking around.
Ill let the truck warm up real good tomorrow and see what it does when I rev it up.
