My 00' 6.8 owners manual says 5-30 oil, my brother in law 01' minni winni oil filler cap says 5-20 oil... Why?

Ask your question here in the Modular V10 6.8l thread. https://www.ford-trucks.com/forums/forum49/
My 6.8l V 10 is an 03 and calls for 5W20 oil on the filler cap and in the owner's manual.
