I'm running the new BFG KM2's.....I get a decent hum out of them because they are INSANELY aggressive......but it's nothing close to the hum on a tire like Super Swampers. I run 48psi in the front......44psi in the rear. I used to run 50psi front, 42psi rear with BFG All Terrains. These examples are for D rated tires.....checked compulsively with the "chalk test"
As they wear, if they aren't rotated excessively frequently mud tires will get noisy. My new Toyo's aren't bad, but they are louder than the BFG A/Ts they replaced and no where near as loud and rough as my old RVTs. Toyo Open Country MT and Goodyear MTRs seem to be a decent compromise, my father goes through MTRs almost every year (he drives 30-40k a year) and even warn down they aren't bad for mud tires.
What ever tire you get, keep them aired up properly, I like 10% under max. And most importantly for noise, rotate them at least every oil change. Rotating with oil changes is an easy way to keep track of it, but as long as your doing it every 2500-3k miles you'll be fine.
