My truck is a 92 F-350 custom crewcab with dual tanks, zf 5spd trans(?) with a 351 windsor for motivation. I'm going to be using this as light duty tow beast(hopefully) 5k-6k lbs at best.
So far this is my plan,
I want to put long tube headers on it and retain all emissions equipment. Which would be better for torque down low a set of 2 1/8 or 2 1/2 in true duals or would a single 3 inch exhaust be better at making torque for pulling purposes? Also which would be better for increasing my mpg?

Heres what im thinkin. put on the headers. Have exhaust shop make a Y into single 3" pipe. That way you just have 1 cat. Get a High flo cat $50 on ebay. Then a single in dual out Cherry bomb extreme, or any other muffler you prefer. Then run duals out at a 45 behind each wheel. This should give you plenty of low end grunt along with the look of duals out the back. Btw the setup described will be LOUD not sure what you wanted...

I don't mind a little sound but the glasspacks are probably a little much for. The system you have described sounds like a pretty good setup. I'm not really worried about the whole look of having dual exhaust just looking for the most usable grunt for pulling.
A cherry bomb extreme is definatley a muffler. People tend to get them confused with the glasspacks. I personally do not like glass packs and wouldnt reccomend them to anyone unless they are flat broke.

He is in the left side bar..and he is really good about answering questions..which one, flow, etc. I will be ordering from him for mine as soon as I get the rest of the parts lined up, but I'm going Banks system this time, and have to save up for it....
Were yours my project, I would run with the Y pipe, 3" from the collectors, and just stay single 3" out the passenger side behind the rear wheel. Far as a muffler, Summit has a pretty decent line for way reasonable prices. from what I have seen from them, they are good quality.
longtubes headers.. going into a single 3" inch exhuast.. i have my 3 inch flowmaster exhuast on.. it sounds pretty good and it gave me the most noticible improvement of anymods.. wanna hear it?
I am currently building an exhaust for my truck, a '94 F250HD with the 351 and C6. As of right now I have done a new high-flow cat and a cat-back. I have a plan for the headers and Y-pipe and will be installing and fabricating as soon as the weather warms up enough. Here is my setup:
1) Flowtech Longtube Headers with 2.5" collectors. O2 Sensor installed in driver's side collector.
2) 2.5" pipe for the Y-pipe, which will merge at the cat.
3) 3" pipe from the cat back through a FloPro V7 muffler to the stock exit location behind the passenger side rear wheel.
From what you have wrote, you are looking for the same thing I am: an increase in low to midrange torque for towing and hauling. I would highly recommend the FloPro muffler, they are made in Canada and are pretty similar to a Flowmaster. I have had mine for a year and love it. It is built really well and has a nice, deep sound that is louder than stock, but not something a 16 year old kid would get.
