Low Engine Temp

My serpentine broke a couple of days ago and while trying to get to the next exit, the truck got a little hot. I replaced the belt and everything is fine, except I noticed the engine temp is not coming up as usual. Could the thermostat be stuck open, and btw where is the t-stat located?

The thermostat is on the top of the water pump where the top radiator hose connects to it.
