skinning fish?

I worked all through highschool and after I got out of school on a catfish lake. We dressed fish for resturants and stores. We would cut the head off with a band saw split from the rectum up with a knife, spoon scrape out the guts and then had a blade skinner to that would cleanly take the skin off and never cut the meat. We could dress 250 lbs in 2 hours, packed and in the cooler. Now if you dont have the equipment to do it that way follow some of the above suggestions.
