Remember, your basically driving a big hammer down the road compared to most vehicles out there. Drive accordingly. I STRONGLY urge the use of seatbelts. Three point works great, two not as good. I rolled my racecar 3 1/2 times down the backstretch of our local track a couple of years ago. Only straight piece on car was trunklid. Windshield popped out, fuel cell tore loose from frame, bent the rollcage. Not a scratch or sore spot on me. Belts are worth every cent! Find the money and put a new three point set in. Make sure they anchored to something solid. Then drive.
I do have lap belts in my truck and I was kidding about the airbags. My dad's friend handed him a roll of bubble wrap and said to wrap me in it everytime I left the house. I was going to put the shoulder belts in anyway but I just don't have the money to do it right now. They are making me get the drivetrain looked at by a shop they know the owner of and I think it is all fine, they just are afraid of old cars even though they drove the worst beaters around for their lives with the infamous 2x4 floor boards. They also said that I should get the seats with the seatbelts mounted in the back of them, great idea.
From what I have read on modern bench seats, late 80's Chevy seats will fit in the earlier trucks well but my cab is much wider than the '56. Do you still recommend the Chevy seats? Or is there another, better choice?

Pay attention to how you mount the seats as well, especially if you go with seats that have the shoulder belts in them. You will probably want a bit more of an anchor point for the seats than just bolting them to the sheet metal floorboards with a bolt and washer. You should probably have some sort of backing plate or something.
Personally, I would go with a 4-point, off-road belt. I think they are far superior to any 3-point belt and easier to mount. We had a long debate about lap-belts vs 3-point belts, etc., a month or so back. Here's a link: seat belts thread
Air bags might help if you weren't wearing a seat belt or managed to twist out of the shoulder strap of a 3-point belt. I do not believe they offer any additional protection over a double shoulder harness belt. Air bags can also kill or maim in an otherwise minor collsion. I would never consider retro-fitting air bags into any vehicle.
i would ventrue away from the seats with bekts in them. Thats just IMO i prefer the 3 point system my self. i will throw my story in here. I had a 53 chevy 2 door post once. This wasy my younger years so i didnt realixe that single stage master cylinders were a bad idea. Needless to say the MC failed and went hauling butt through a red light. Hit a honda. Lets just say it cost 500 bucks to fix my car and you could barley tell what the hell it was i hit. I love old steel. cuts through this new crap like a hot knife thorugh butter.
By the way the lap belt i installed helped but i still have a scar under hair line form the sterring wheel
