Quick update about my cooling problem. I posted back a week or so ago about my 82 F-250 351W getting hot. I put on a new water pump, a 165 degree thermostate and a flex fan it runs just as cool as can be. I even went and picked up the 30 foot 5th wheel I bought (still hoping the truck would pull it) the truck pulled it fine the temp got up to about 190 running about 60-65 mph. So in short yes you should run a thermostate and yes a 82 F-250 351W will pull a 7800 lbs load, you won't win any races but it will get the job done. Thanks for everyones help.
Glad that you got the job done, but 165 is too cool for that engine. 180 is the lowest I would go with 195 being the ideal temp. When the gauge says 195 all that's telling you is that the point where the sending unit is taking readings happens to be 195. You have 160 degree water circulating through the engine in other places, and I wouldn't want that much of a temperature difference in my engine.
Also, with a thermostat that cool, you're not going to get complete combustion in all cylinders. This will lead to carbon build-up in places you don't want, like the valves, the EGR, and the rest of the exhaust. Been there & done that.
I'll also add that running with a thermostat and running without I see a 33% economy drop on the interstate. I had one stick on me so i pulled it out and finished my trip. First part of the trip i got 18 (which was pretty normal), second half I got 12mpg (i pulled the thermostat and topped off since i was at a gas station already).
