Hot Sauce

I make my own out of a Thai recipe that I found in a kiosk.
Get some fish sauce at your neigbhorhood Asian market.
Get some unseasoned rice wine vinegar.
Get a lot of those fresh (not dried) Thai chili's that are the size of your 5 year old's pinky finger.
The zest of one lime.
These are optional, I added them for a different flavor
Some garlic cloves.
Some grated ginger root.

Cut all the chili peppers up into very fine little rings about 1/32" thick.
Put them in a resealable container that will hold about two cups.
The fish sauce is VERY salty so I cut it down with a 50/50 mix of fish sauce and the rice wine vinegar. You can put in the fish sauce straight but it's too salty for my tastes.
Zest the lime into the container.
Pour in the fish sauce/vinegar mix until the peppers are covered and floating a touch.
Let it sit for a day.
Spoon out the peppers onto whatever you want to spice up and enjoy.
You can also boil the vinegar with some sugar to sweeten it up before adding it to the mix. VERY good that way.

Finally I see it. I can't agree on the tabasco, but Tony's is the s#!t!!!!!

For sauce the only thing I'll eat is Louisiana hot sauce. Yes that's a brand. Look for it and try it. It's the best taste I've found so far.

I use Tony's seasoning on everything but my fries. For them I use Tiger seasoning.

Spontaneous Combustion, used very sparingly, is the taste of hot sauce for me.

If I want to use a lot of sauce, I like Cholula.

I was hooked on Tapatio for years, but finally got sick of all my food tasting like Tapatio... Finally started to appreciate Tabasco, because it doesn't overpower the taste of the food, just heats it up (pizza with Tabasco on it and some ranch to dip it in is the best). My old roomates had a bottle of Habanero extract, I was putting that on everything! It hurt more coming out than going in, so I had to stop...
My friend bought me a bottle of Prof Phartpounder's Colon Cleaner Hot Sauce as a joke. My buddy and I went through the whole bottle in no time marinating meat with it. I highly recommend it!

I've just currently started growing Jalapenos, Anaheim Chilies, Habaneros, Cayennes, Caribbean and Serrano Peppers in hopes of making some hot sauce from scratch. This'll be a fun experiment...

Garden tip #53: never plant peppers to close together, they will cross pollinate, inafect causing: They will all have the same heat value. Too frigen hot!!!!

Thanks for the tip! I've got them kinda close (about 15 inches apart right now) as they're just babies. Trying to get it together to built a big bed to plant them all in (we have a pig that eats or shreds everything). Just looking for a good deal on RR ties...
PS Too friggin' hot does sound about at my level though...

Alright.....Safety Alert!

For those of you who like to process your own fresh peppers (salsa or sauce).....WEAR LATEX GLOVES when doing the slicing or dicing......Particularly if you wear contacts (some of us) or occasionally go to the bathroom (all of us).......You can't wash that crap off and it takes a couple of days for the oils to leech out and disperse.........

Good tip.....I haven't really considered that before......

I dedicate separate (short) rows for my plants....and the rows are spaced far enough apart to allow a tiller to go between them.....Is that far enough apart?........

Doing Jalapenos, Anaheims, Poblanos, Serranos, Cayennes and a couple of Habaneros.......

For those interested.
I was given some purple habaneros, that I'm drying right now to get the seeds. My mother brought these up from her trip to Mexico last year. She says they are hotter than the typical red, orange and yellow ones. Send me a PM if you want some seeds. I can't send too many, but hopefully at least one seed will take.

Yes that should be fine. I made the mistake of letting the leaves of a bell pepper and a jalapeno plant grow together. wooooooooh..........hot bell peppers
