360 rebuild upgrade?

360 rebuild upgrade?
Hey guys,
I just bought a 1973 F100 with 360/C-6. It is running but has been setting out in a field for the last year or so. What all do I need to change/check once I get it home, besides oil/filter, gas/filter, tranny fluid/filter, and radiator fluid? I also plan to rebuild the engine and maybe even upgrade to a 390. I am a Marine so I am looking to do this on the cheap as much as possible. This truck will only be used for towing my Jeep around to rock crawling events and cross country when I get new orders. I don't have much wrenching experience but am trying to learn more. Can any one send me a list of parts I should/They would use for this? I would like to get at least 12-14 mpg out of her on the hwy. Also any engine shops around DFW that you would recommend?

Engine questions are best asked in the engine related forum.
The rebuild of an engine and performance of that engine has absolutely nothing to do with a year of truck.
