I had a deer run into my left front quater panel on Thanksgiving day! The Ex faired Great! Hardly even new I was hit. Deer had Christmas lights strung up in his antlers, so he was running crazy! My question is, I have 2000 Limited with chrome bumper and old style grill. The body shop says there is no way to change out the bumper and grill to the 2005 color coded bumper and grill. I figured while the insurance company was paying it was the perfect time to do this as I have always wanted to do this anyway! I know it has been done, I've read on this forum too many times that people do it!
They say the clips are too much trouble to change out , the new bumper will have to be cut down? and the new headlights will not fit?
Any advice?

Any advice.... heres mine..... Go find a different bodyshop.
I'm almost sure the body shop was trying to say the insurance company would not be willing to pay for the additional labor and parts required for a 2005 facelift.
While I do not know the specifics, the 2005 facelift is not quite as simple as most people would think.
You can on eBaY find a 2005 grille machined to work on pre-2005 models for $299. This is another option you have.
Whitex, I have a 2002Ex that I was able to change to the new 05 style bumper/grill/lights. I found the change to be quite stright foward. I did have to change the headlight header to match the new style. Once you have the new headlight header the 05 lights and grill snap right into place. The bumper does bolt right on however all of the mounting brackets/bumper supports inc. fog lights need to be replaced to match the new bumper config. My sugestion would be to find a complete 05 bumper from an auto salvage yard or check E-bay Item number: 250058709313? I also needed to adapted the headlight wires for the new lights, They have a different bulb in them. A body shop should be willing to work with you, But I dont think the insurance money will cover 100% of the change over.

You should ask RACERX7775, he's done the conversion. Basically header panel, bumper, lights and light bulb adapter plug, grill, and fog light changeover.

The guy doing the work is very reputible and is helping with the cost of the deductible. I think he just doesnt want to hassle with whole thing. He knows it will take some cutting down of the new bumper and did not think it was going to be a huge price difference. What is the cost if I decide to do this on my own later?
Venison is a very possible Christmas dinner choice!

What is this cutting down you speak of? I never had to cut anything on my bumper.
I have read here in the past that you have to trim part of the grill and corners of the bumper to fit. What year is your bumper? 05 or 06?

I'm think that you are thinking of the 05 grills that have been modified (trimed) to fit the 00-04 bumpers. Some even trim the core support for the headlamps to fit properly for people who chose not to buy the core support.
The only "trim" that I had the cut was a little trim that covers between the bumper and headlamps. (I dont recall what its called. perhaps filler?) The 05 headlamps did not fit properly unless I cut part of the trim off. Here are the pics
