My '91 f150 4.9L 5spd has a little miss when taking off easy. I've had the negative cable disconnected for a week while it was in my basement with the trans out waiting for clutch parts (got shipped the wrong part #*%##!!!).
My question is if it's possible that the sputtering may be due to the computer resetting, or would that even happen if only the negative cable was pulled?
Unfortunately the computer reset, and more bad news is that it shouldn't take too long to re-compensate.

Ford electronics, emissions, and fuel systems will cause problems if you look at them the wrong way; It is a great system, but if just one or two sensors or actuators aren't working dead-on correctly you'll get hesitation or rough idle. Many idle problems are caused by build-up of oily carbon deposits, that clog things like your IAC, PCV, throttle body and butterfly plate, etc. etc.

Go to the store and get a can of SEAFOAM asap, a good intake cleaning may be needed. Do a search for SEAFOAM here, you'll find out how to use it, although the instructions on the can work too. I SEAFOAM my engine intake a few times per year.
the computer resetting should not make you truck miss it will run little rough first start up after siting. but check your ignition system wires cap & rotor for build up. and fuel filter if you are not gitting anny codes
