I believe the performance sensor is smaller than the stock one. Therefore impeding less on the flow of air through the intake. I'm not sure if there would be a noticable difference to justify spending $250-$400.
An aftermarket MAF can hinder airflow if it is smaller than the inlet tract and throttle body. However, ther are many other (larger) sizes to choose from as well.
As Eric stated (EPNCSU2006), if the stock air meter isn't reaching 5volts, then there is no need to change it.
