I have a stock 360 in a 68 2wd with a c6. It has a 2bbl intake and I am going to build a 4bbl 390 when $$$ permits. My Holley 2300 is needing a rebuild, and I could trade for a 500 cfm Holley 2bbl that needs rebuilding as well. I then wondered if it would be better to just go ahead and find the 4bbl that I will use on the 390 and use one of the adapter plates until I am ready to put it on the new engine.
A few of the guys who have run the 4 to 2 adapters weren't too impressed. The only person I've seen keep one of those adapters on a motor replaced a 4V with a 2V. Seems he couldn't keep tires on his car with the 429 4V set up.
I'd just kit out the 2V; unless the throttle shaft has worn out the holes in the throttle body. Ask about the 500 CFM in the FE forum. I don't know how it would do on a stock 360.
fly, There are many different opinions when it comes to carbs. Rebuild the one that you have now and wait for the 4 barrel until you have built the new engine to use it.
Keep this in a corner of your brain, Nascar Busch series runs a 390 cfm carb on the race cars.
The factory 2BBL for the 360 is about 354cfm. In the carb and EFI forum, I posted a breakdown of the different cfm ratings and how to identify them.

i have a 390 thats .30 over with headders and edelbrock intake anmd carb and crane cam ive used holleys in the past but its hard to beat a 600 elec choke edelbrock on my set up i had to change the metering rods and step up springs ( TOOK LONGER TO OPEN THE PACKAGE THAN TO CHANGE THE PARTS ) love those edelbrocks.
I have a '72 390 in my truck with a 500 Holley 2bbl. It runs great but is very thirsty, I have plenty of power and lots of throttle even in high gear. I use this truck for hunting and most all attitudes and altitudes it runs flawlessly. I'd stick with the 500 if it were me
