how hard is it to tackle this job. In my head, it dosent seem very difficult at all, just remove the bed and swap out senders.. cant be that hard. The only thing is i have a long bed, so im thinking the bed might be very heavy. Would it be easier to drop the tank?
Yes and a floor jack comes in very handy to help support the weight as you reattach the strap bolts.
Yes indeed, but you've got to be careful with that. You don't want to crush the fuel pick-up with the bottom of the tank (stupid plastic tank). I use a length of 2x6 on the jack to spread the load.

Good advice there Cookie. I used my transmission jack and the foot is about 2x2 square if you spread it out.
