I agree with jowilker. Mine is a 66 352. I don't drive it much around Dallas because it does this. It's been mine since 93 and has always done this. Also the temp sending unit is right on a hot spot and I wonder if I'm getting a true reading.
I just checked and the 66's did use a fan shroud. 90% of them are gone off the trucks today, which caused it too warm up. My truck is a modded out 352FE and got the stock radiaatior and stock fan and shroud. It is adeduate but if I sit in a hundered degree traffic for over 20 mins it begins to get hotter and hotter. I am consdierding getting a eletrci fan. Also If im at low speeds and punching it hard then it will also warm up.
I had my truck out yesterday for a country run. At 55 mph it is turning 2100 rpms and 25 at 70 with a 3.00 rear. I was trying to keep it around 55 because it has no manners at all with gas. It is a real lush in that area.
The only time that I see my temp guage go up is when it is idling in the heat for an extended period of time. I see shrouds listed but have never seen one on a mid 60s truck from the factory. Any one for a 70s 360 will fit and be a good idea to have on. I try to remember to shut it off if I am hooking something up. Another thing I learned way back when is to leave the water level down a couple of inches and it will remain constant.
