I have an '83 F150 4x4 Stepside with a 2.5" suspension lift (the lift is an amateur job from previous owner). Body is great, but 4.9L six is toast, the granny+3 speed stick is a drag, and (after two f.e. alignments) the front wheels look drunk. I'm thinking about taking the body off this rig and mounting it on a newer F150 4x4 rolling chassis.
Question: What years of chassis can I consider that will make a good fit (emphasis on bolt-on easiness)? Has anyone ever done this? Is it a good idea, or am I just asking for even more stress than I've already got?

Not sure how much newer of chassis you can use. However, using a 80-86 chassis will make for a fairly easy transfer process with your 83 body. I put a 86 body on an 81 chassis with no issues.
