Newb here and I'm looking to add to the 4" procomp lift and 35" tires on my v10. What I'm aiming for is the ability to ACTUALLY go offroading. i dont want to worry about breaking parts, or having to go slow, or *****footing my truck because I don't have the strength in my suspension. I'm really not knowledgable yet, so I'm looking to learn, get some suggestions, maybe some do's and don'ts.

well the best advice anyone can give you is to just get out there and play around witrh it....see what you like and what you don't and to change what you don't like learn about it. and the stuff you do like....learn more!
if your wheels start hopping get off the gas
when you are stuck, learn to know when to quit cause after a certain point you begin to dig yourself in
get spare parts
learn the difference in metric and SAE size wrenches (that was a joke)
keep spare parts
get a good selection of tools to carry with you
always go with a friend in another truck in case something happens
get to know the folks at National Tire and Wheel
get a welder, lathe, drill press, garage 2 post lift, tube bender, plasma cutter, and maybe an oil pit and you will begin to gain some good mechanic'n buddies!

I would offroad your stocker for now. Its pretty beefy from the factory. You will be amazed at what offroad stuff you can do with a stock truck. Once you find out the stockers limit then it will be time to upgrade. For 4x4 lifts most of the guys in this forum will tell you Skyjacker lifts are the way to go. Good luck and have fun!
Like the saying goes, "if it aint broke don't fix it right?" I know your probably itching to get new tires and suspension and don't get me wrong those stock tires will definitely limit you on what you can do. You don't need to get all crazy though. Lift sucks for 4 wheeling because you want to keep your center of gravity fairly low. If I were you I would look into a 4-6" suspension lift and some 35"-37" tires to give you a little better traction and some more ground clearance. If your mainly onroad go with a good AT design tire like the BFG's or if your not onroad much you can go with a mud terrain. BFG MT's are a good compromise between street and offraod because you can still get decent mileage out of them but don't expect them to perform like a super swamper would offroad. What's a good aftermarket bumper to buy? Or good dealer to search thru? I figure I should atleast protect the truck from any collisions that might...will occur.
NO dont get AT's (all terrain) get MT's (mud terrain) at the least!
Lift, exhaust/ muffler, chip, bumpers, shocks, steering stabilizers, and youre good til you start going crazy offroad, which will happen eventually. Maybe even chip your V10 (Superchips and Diablo chips are good).
