Well today it was -30`C here and when I went to start my 2001 F150 with the 5.4 and you could here the starter going click click but did not have enough torque to turn the engine over, I then held the key and it eventually started to crank. I don't know about anyone else but I would say that ford's starter is crap even though I love ford I was not impressed. I used to have a 91 f150 with a 302 and that thing would start in -40`C weather.
Also when I did finally get my truck going and yes I had plugged it in for an hour, the speedometer was all the way over to the right side and it stayed like that for a little while until it was jarred back or had warmed up enough.
I would suggest checking the condition of your battery. Also if your battery cables are corroded this will prevent your battery from charging properly and if left too long will probably ruin the battery. The clicking is usually caused from not getting enough power. This happened to me before and I now regularly check for corrosion. This morning here in Edmonton, AB it was -33C and my truck start just fine. It was plugged in and I have a new battery. Hope this helps.
It does sound like a weak battery problem. I had a bad battery and would get the same thing, starter clicking and the guages would spike up and down (and that was in 100 deg. weather!)

my truck had the same problem you decribe when it was new(not even a month old). It would be hard to start or not start at all in cold weather. I had to fight with the dealer to put a new starter in my new 1 month old truck. After they replaced it you tell the difference 1st start. The new one just sounded like it spun much faster and sounded totally smoother. Haven't had a problem since.
try going to autozone for a load test on the battery if it passes, then check the amp draw on the starter,its going to draw more when cold but it should stay in limits, then take info back to the dealer if still under warrenty
