100% agree on leaving the A-pillar alone. There was no way I was going to remove my grab handle.
I ended up getting 5 gauges (twin EGT, boost, trans, and fuel). I wend with the overhead triple pod and the 650 lower dash (picture below). They were fun to ogle in the beginning but, as @Sous mentioned, they move down the list as you get your truck dialed in.
I didn't have any wild tunes but when I turned the wick up for some fun, I did pay attention to the gauges to make sure I wasn't flirting with disaster. Twin EGTs were a quick half-split when trying to figure out which side (or both) was suffering an issue and having fuel pressure at a glance was a bigger comfort than I expected after so many years of tunes without gauges (yes, I know,..bad idea).
I also used an old Android phone (purchased at Walmart but not activated) that I installed Torque Pro on to monitor other PIDs at my whim (lower left on the windshield - out of my primary field of view).
If I was going for 4 gauges - without the lower 650 dash as an option - I would go with an overhead gage pod (I did not have any fitment issues with my pod above my rear view mirror). I bought mine (Autometer) through RiffRaff Diesel but Autometer still sells a quad overhead pod on their website.

I'm still really surprised that with all the 3D printing which has gotten so popular that someone hasn't punched in on the concept of an "over-the-dash" mount right on top of the gauge cluster. It' would offer the most direct line-of-sight option without interfering one iota in viewability through the windshield. I checked the measurements years ago (when I still had my F250), and there is enough width there to pop in as many as 6 or 7 gauge spots, and the top of the mounting would still fall below the viewable end of the hood. On top of that (to be punny), the wiring connections would be shorter there than anything else except ofr under the dash positioning. It would also look quite sleek by being a form-fit curve which matches the dash as if it were factory generated, and the issue of "supporting the weight of all those gauges" would be mitigated (or minimized) with it sitting on the dash top.

If you are looking to color-match the gage pod I highly recommend RiffRaff Diesel. I used their interior paint and it was a perfect match.
I didn't want the pillar mount gauge pod but it is the easiest to install. I found a used complete set of gauges with the pod, sprayed the pod to match my interior and put it in. It has it's moments where it is annoying but overall I can live with it for the price and ease of install. now I'd like a coolant temp. and oil pressure gauge along with a voltmeter.
Fwiw I understand the "coolant" (actually oil) temp on the dash is reasonably accurate. Dash oil pressure is pretty much a on/off switch but it only matters if it goes way south so why bother monitoring it imo. I use a voltmeter in the lighter socket, but ya gotta remember to take it out when truck lays up for a while.
I did get the Autometer 4 gauge pod...and then found a used center lower dash out of an F650 a couple days later. I'll be putting the Autometer 4 gauge pod up for sale shortly for a good deal if anyone's interested. I may have a lead on another used F650 dash I'd like to get for the Excursion. Interestingly I stumbled on another option the F650/F750 trucks had as an option for gauges to be mounted overhead I've not seen before...

Nice, I looked hard at that mount option too, but needed other things incorporated...one of which is my brake controller that's mounted in that space. I will also be mounting an oem double switch...one for heated mirror and one for the mirror LED working lights...from a 2wd Excursion which is mounted where the 4x4 switch typically goes. My F350 is manual 4x4 shift on the floor so the spot on the dash is free, but the Excursion switch mount is a bit smaller than the blockout. I should have room in the F650 dash piece for it, but need to check if it fits better in the top or bottom section.
