I had a question about the EGR setup on my 300 inline-six. I’m doing an EGR delete, but the exhaust tube that runs up from the manifold is still in place. What are the pros and cons of just leaving that pipe there and blocking off the EGR spacer instead of removing the pipe entirely?

Well i should think if you leave the pipe there you will still get the hot exhaust up it. That may keep it warmer. Maybe good maybe bad depending on latitude, season, and where you block it off. It is unattractive and will find its way into your way! So long as its blocked off you may need to tune it or adjust the timing as you will run warmer without it working. The delete itself will force some adjustments, it will run cleaner (but warmer).

Ideally, deleting OE smog equipment would require adjusting the carburetor and the timing. I'm not sure how much computer control is in your truck. It might be a difficult proposition. Not to mention anything about the fact that it may be illegal where you are.
99% of the time, the EGR system wasn't working anyway. There is always something to fail on these things. Or it is a computer controlled engine and it wasn't working because it was already disconnected.
less carbon build up because you are no longer recircing exhaust air back into the cylenders. Warmer because that recycled air tends to cool the cylender. You will need less fuel so it will need to be tuned leaner than before.
You would have more oxygen in the cylinder because there is no exhaust (inert) gas in the cylinder so you would need more fuel. Have you actually decreased the jets in the carb after deleting the EGR? . You would also increase emissions without EGR.
