My ´78 351W takes way to much rpms when I start and it doesn't help give a little throttle.
The wacuum system is working as it should, and I can't detect that it takes false air in the carburetor.
Does anyone have a good idea what it can be

I'm sorry dude... but I have no idea what you are asking or saying...
Unless swapped, your engine is a 351M, if it's rev'ving up after starting, you'll need to adjust your choke/fast idle

I would remove the air cleaner and make sure there is no interference with the throttle linkage, make sure the choke is fully opening after the engine warms up, make sure the fast-idle cam on the choke is not bound up...if all those things are working, then either adjust the idle speed on the carb and/or choke (as previously mentioned) or keep looking for a vacuum leak.
Sounds like the choke to me as well.
If you can, please post up some pictures of your engine compartment. Especially, as mentioned, with your air cleaner, housing off.
when it’s running at high RPM, does it stay that way? Or does it eventually come down?
I got a Edelbrock 1406 with auto-choke, mounted last year and that is working just fine, connection with choke house is going smooht and nothing is stuck.

There is a high idle cam on the choke side of the carb base, when the choke opens, that cam should move to let the throttle plates shut to where ever the regular base idle screw is set. My Edelbrock is a manual choke, so I'm not 100% sure of the mechanism on an electric choke Edelbrock. Might look close at the "instruction / install / setup" paperwork that come with it. I believe you can find it online too.
You didn't leave any vacuum ports open by chance, like the big one in the back meant for PCV?
If you have checked all the previous suggestions and believe there is still a vacuum leak, fill a plastic spray bottle with adjustable spray mist tip, with water, (available most $ shops) and with the engine running, spray around the edges of the intake manifold, base of carburettor, if the engine then reduces revs at a particular point you've found your vacuum leak, possibly a bad intake manifold gasket, carb base gasket, or even a worn carb butterfly shaft.
Check all vacuum hoses the same way, also look at the brake booster and vacuum line, a booster diaphragm leak can also cause a vacuum leak.
