When you are racing I think you are supposed to leave it off. It's either than or when you are towing something. I'm not 100% on that as I've never owned an automatic. Here's a way to tell for yourself:
Get on a straight road and floor it from about 30 mph with the OD on. Hit the OD button and if your truck downshifts, then you are supposed to leave it off when racing.
The O/D off button only keeps the transmission from going into 4th gear, period. It won't affect the shift points. You can play with it and see what happens; you're not going to hurt anything unless you do it all the time. I'm pretty sure you can get upto at least 80mph in 3rd without hitting the rev limiter.
Well I do notice if I turn it off, I tend to waist more gas and if I'm going on a freeway onramp it apears to be some what quicker if I turn off the overdrive, but I do notice the gauges do go up though.
I race my truck in the 1/4 all the time running Nitrous with the overdrive on and I never hit 4th gear. If you've got it floored, your truck will not shift until you''ve passed 5000 rpm, regardless of whether you have the overdrive on or off.
Just like AJ said, it has no effect on shift points. Unless your towing, leave it on and ignore it.

Ehhhh, I don't remember what the top speed in the quarter is. Mine is DOT governed at 189mph but will do 9.4's in the quarter, stock out of the box with no modifications. I've seen it at the track numurous times.
However, I'm not that good at dragging it because I don't really drive it like that, so I don't think I could hit those times. It is very capable though. I've never taken it to the track because i'm afraid of flipping it over and smashing it. I've seen that happen at the start quite a few times.
