I replaced the master and slave cylinders, bled the clutch but only have a pedal half way down and it doesn't disengage the clutch or trigger the safety switch. I can start the truck by pulling up on the safety switch but can't go anywhere, this is my daily and I can't get to work.

Post #16 looks like a good way to do it.
The clutch interlock switch issue could be caused by firewall flex. It was an issue with some of these trucks.
Here's a picture of where it flexes.
Check the pedal bushings and the lever for being worn
Check the pin on the lever where the pin meets the bushing that goes inside the master cylinder rod
If the pin gets worn, the clutch will not disengage
Safety switch?
You mean the clutch interlock switch that allows for start?
That should work even with an un-bled clutch (crank over and start)
If it is not starting, you should check the pedal bushings and the little pin on the lever
The master cylinder pushrod hole gets oblong when the bushing wears out
A new bushing sometimes fixes it without replacing the master cylinder
Same with the pin, sometimes a new bushing will work with a worn pin
The test is
Get down there and see how far you can move the clutch pedal before the master cylinder push rod starts to move
That master cylinder push rod should move as soon as the pedal moves
