My DEF gauge behaves like this, but only when I fill the DEF tank. It takes about 30 minutes of driving for it to register the full amount of the DEF when I top off the tank.

I've read that is somewhat common for 17-19 gen. My '19 is an exception, I don't know exactly how fast it registers after adding a jug, but it's quick. I add a 2.5g jug when it shows 1/4 tank, in the short time it takes to rinse out the nozzle and toss the box, maybe 5 minutes, key on engine off it shows around 5/8 tank. Next time I'll try to check it immediately after adding the DEF.
I have the DPF % screen on most of the time, so I don't watch the DEF screen too often. On my 2017, the DEF screens don't display a percentage as I recall. It's an empty to full gauge on one screen and and "OK" on the other screen. Is that different with the 2023?
the 23s have much better gauges and information you can display
it has a diesel measurement screen that simultaneously can display DEF level and DPF %, turbo boost, exhaust brake, etc.

Yes DEF level. Obviously something with the sensor, just asking if anyone has seen this.
My truck will climb to the correct def level after start up. Usually only takes a few minutes. I assume it is the float level adjusting upon start up. It is annoying, but it will be consistent so I have not asked about it yet. If guys trucks are not doing this, I will ask at the next 5k mile oil change.

I added DEF to my truck this weekend. It registered the new level right away. But I have a empty-full gauge, not a percentage readout. It hasn't always reflected a recent addition of DEF, so I've learned to be patient.
