Ok, I also forgot to mention that there seems to be a very large draw on the electrical system. rolling up the windows, the windshield wipers, the ignition, all takes a large draw on the electrical system. as in I can watch the volts on the dash go down significantly. most notably when the engine is hunting to stay running after starting it. it'll go up to where it normally sits, then as the engine slows down, the volts also go down. it sounds like a ground issue. I have one main ground wire from the battery that goes straight to the alternator mount. is that where it's supposed to go? is there supposed to be more than one? Thanks.
OK! I have made progress. I replaced the IAC because it was the main suspect for the problem. I started by removing the old one to inspect and it looked brand new. however, I took the motor apart and watched it as the truck was running and saw no movement at all. So, I finally gave in and bought a new one. and immediately I can hear the air being sucked in by the valve. however, it's still not 100%. upon starting it no longer stalls! but it does idle high (1500 RPM) for about 2 min. when the truck goes to idle down it loops and hunts between 1050 and 900 rpm. for about 2 more min and then finally settles at about 800 Rpm. is this normal? I would think the hunting at 1000 rpm is definitely not.
It is most likely just relearning idle speed for a few starts

Ok I went exploring on the truck last night and found no major issues. however, with this being said the actual throttle on the throttle body are loose. not the cable but where the cable attaches to the throttle body. it's not loose as in no spring tension but loose as in it rocks back and forth and up and down. only on the top portion of the throttle. the little arm attaching the two butterflies together are all fine as well. is it normal to have lots of play? when you push back or down on it when it's idling it seems to idle down a bit.

Check to see if there's an "E" clip in this groove.
In this picture, the E clip is missing. That let the throttle bracket ride up, over the throttle stop screw.
