Ok so back story I’ve had this truck about a month it’s been running fine until now, under load/ acceleration it sputters but when it does sputter is not consistent I’ve gone days with it it messing up. I scanned the truck was showing code for EBP looked at live data with torque pro confirmed EBP was bad replaced with OEM sensor, at the same time did new fuel filters and the “blue spring” fuel regulator upgrade. Same issue continues. Info on truck 07 6.0 230k miles cold air intake, egr delete and straight pipe. Other then that it’s stock. Any advice would be appreciated thanks.

I would check fuel pressure and also do the two "bubble tests" for air in the fuel.
The first bubble test is when filling an empty secondary fuel filter bowl. Have someone turn on the key when you are watching the fuel filter bowl fill up (it should only take 5-6 seconds, so BE READY to have the key turned off). Time how long it takes to fill, AND WATCH for bubbles when filling.
The next test is with a 3/4 full secondary fuel filter bowl. Crank with the starter solenoid (key off) and watch for bubbles. There are youtube videos on this.
Lastly - where did you buy the fuel regulator spring? Some places have had many issues with them (blue parts especially).
-From your live data read. Your VGT% is very low for idle. Should be up in the 70-75% range at idle, you are at 41%. You may have some VGT issues or still have issues with the EBP sensor. Pigtails are a known failure point as well. At idle the VGT is modulated to maintain a certain EBP Value.
-From your video your boost is super low. I barely saw 10psi at 3000rpm. This may be related to the VGT being too far open so I would start with that first.
