Ceramic pads are fine for lower dusting on a passenger car, but on a heavy truck that tows, semi-metallic perform better.
I bought a brake lathe years ago. I still buy new rotors about half of the time. Truck rotors see to have a little more meat on them to turn them before they get down to the minimum thickness. Towing in the Rocky Mountains, I change my brakes when the are down to half a pad left. I want new pad level of performance.

Definitely check out the OEM pad material and use that, especially if you tow. I believe all the Super Duty Trucks use semi-metallic, because they perform better under heavy breaking.
