That 197 stat is too hot for your old carbureted 400M
You should have a 180-185
Look at Motorcraft RT170 or RT 358
Well, you right, my point was the "hat" and it's importance. I wasn't so much pointing to 197 degrees. I actually have Robert Shaw in my truck, it will get up above 170, even up to 180, but I forget if the one in my truck is a 180 or not, but I think it is. 160 is too cold for here, I tried one, liked to have froze in winter, it's a spare now. I have couple spare RS 333-180 ones in my cabinet too.
Long long ago once before I figured it out, bought a new T-stat ... and they sold me a W one and I didn't know the difference .... truck would just slowly get hotter and hotter. I also have a Flow-cooler disc on my water pump's impeller, it keeps it from cavitating and spilling coolant off the vanes, adds push.
It really is just a disc and 6 stainless steel pop rivets. I recall they also sold already modified water pumps.
That's not "my" water pump, it was just a picture from the innernet for illustration. Mine will not have rust because it always has 50/50 mix.
If you have a Robert Shaw 333 series T-stat and need to replace it, do not toss it away. The 333 (like 333-180) is no longer sold, but the hat can be carefully pulled off / removed and pressed carefully / put on a 330 series like 330-180 as that is the only difference. It's just pressed onto the power pill.
